Salmon with green beans, wild rice and lemon

A delicious recipe for those looking for a healthy but immensely tasty dinner!

Ingredients

2 tsp Co-op olive oil

2 Co-op salmon fillets

1 lemon, zest and juice

2 cloves Co-op garlic, crushed

200g Co-op green beans, trimmed

250g pack ready to heat wild rice

Large pinch black pepper

½ stock cube dissolved in 150ml boiling water

Few sprigs Co-op fresh parsley, chopped, optional

Lemon wedges, to serve, optional


Method

Heat oil in a large frying pan over a medium heat. Add the salmon fillets skin-side down and cook for 3–4 minutes until golden. Turn and cook for a further 2 minutes, then remove from the pan and set aside.

Add the garlic and green beans to the same pan and cook for 2–3 minutes until fragrant and just tender. Stir in the stock and lemon juice, bring to a gentle simmer and cook for a further 2 minutes.

Add the wild rice to the pan and stir to heat through. Return the salmon to the pan, scatter over the lemon zest and black pepper, and warm for 1 minute.

Finish with parsley, if using, and serve with lemon wedges on the side.
